Chickpea, Feta and Coriander Salad

Try this quick, healthy and tasty salad.

400g tinned chickpeas
olive oil
1 large red onion
5 garlic cloves
1 red chilli
250g crumbled feta cheese
4 spring onions, chopped
large handful chopped coriander
large handful chopped flat leaf parsley
juice of 1 lemon

Rinse the chickpeas and put them in a bowl.
Heat 1 teaspoon of olive oil with a little water and steam-fry the red onion gently until it is lightly golden.
Add the garlic and chilli and cook for a few more seconds, leave to cool.
Add the feta, spring onion, coriander, parsley and lemon juice to the chickpeas and season with black pepper and a little sea salt.
Add the cooled garlic, chilli and onion and mix well.
